Rainbow Marshmallows with Chocolate Syrup Recipe

Rainbow marshmallows are a colorful and tasty treat that are suitable for any occasion. The homemade marshmallows are soft, fluffy, and flavorful, and the chocolate syrup adds a rich and decadent touch. Furthermore, the vibrant colors make them a standout addition to any dessert table.

  • Cook Time: 4 hours
  • Total Time: 4 hours, 30 minutes

Instructions

  • Set aside 1/2 cup cold water to dissolve gelatin.
  • Combine the granulated sugar, corn syrup, salt, and 1/2 cup water in a large saucepan.
  • Bring to a boil, stirring occasionally, over medium heat.
  • When the mixture reaches 240°F on a candy thermometer, stop stirring and let it cook.
  • Take the pan off the heat and stir in the dissolved gelatin.
  • Stir until the sugar is completely dissolved.
  • Stir in the vanilla extract.
  • Separate the mixture into separate bowls for each desired color.
  • To each bowl, add food coloring and stir until the desired color is achieved.
  • In a separate bowl, combine the cornstarch and powdered sugar.
  • Coat a 9x13-inch baking dish with cooking spray before dusting with the cornstarch-powdered sugar mixture.
  • Spread the marshmallow mixture evenly in the prepared baking dish.
  • Allow it to sit for at least 4 hours, or until completely set.
  • Once the marshmallows have set, cut them into small squares with a knife.
  • To make the chocolate syrup, melt the chocolate chips and heavy cream together in a small saucepan over low heat, stirring constantly until smooth.
  • Serve the rainbow marshmallows with a drizzle of chocolate syrup on top.
