Instructions

  • Preheat the oven to 400 degrees Fahrenheit (200 degrees Celsius).
  • With a fork, prick the sweet potatoes all over.
  • Bake the sweet potatoes for 45-50 minutes, or until tender, on a baking sheet.
  • Remove from the oven and set aside for a few minutes to cool.
  • Make a slit in the top of each sweet potato and mash the flesh with a fork.
  • In a small mixing bowl, combine the butter, brown sugar, cinnamon, nutmeg, and salt.
  • Evenly distribute the mixture over the sweet potatoes.
  • Sprinkle a few mini marshmallows on top of each sweet potato.
  • Return the sweet potatoes to the oven for 5-7 minutes more, or until the marshmallows are golden brown and melted.
  • Serve immediately and enjoy.
